This sockeye salmon is smoked using a "hot smoke" technique, where the fish is marinated in a salty brine, then smoked at temperatures above 165°F, and finally flash-frozen to maintain its delicious, smoky flavor and ensure its longest shelf life. Sustainability is key: our Sockeye is caught in Bristol Bay, Alaska waters by our friends at Wild for Salmon. In Kodiak, we source from the Suna'q tribe and Kodiak Fresh Seafood. Salmon populations in Alaska are closely monitored, regarding it not only for its economic value but also for its deep cultural significance. Every year, the Pacific Fishery Management Council reviews reports of the previous fishing season and current estimates of salmon abundance to prevent overharvest through limits on the fishing season length, quotas, and gear restrictions. Two independent certification standards guarantee the responsible management of the Alaskan Salmon fishery: the Alaska Responsible Fisheries Management (RFM) and the Marine Stewardship Council (MSC) (ASMI, Coho Salmon).
